The Azienda Agricola Diotallevi Tartuficoltura is a small family-run company that focuses on the quality of the product, both fresh and processed. The truffle is harvested in its plantations, located in Umbria specifically in the areas of Colfiorito near  Foligno and in the areas of Sellano.

The truffle species we have according to the periods are:

  • Summer Black Truffle commonly known as Scorzone (Tuber Aestivum Vitt.) Whose collection begins on the last Sunday of May ends on 31 August;
  • Black Truffle (Tuber Melanosporum), which begins on 1 December and ends on March 15;
  • White Truffle (Tuber Magnatum Pico), harvested from the last Sunday of September and ending on 31 December;
  • Untreated Truffle commonly known as Tuber Uncinatum, whose harvest begins on 1 October and ends on 31 January;
  • Truffle Bianchetto commonly known as Marzuolo (Tuber Burchii) whose collection begins on January 15 and ends on April 15th 

As for fresh truffles, even for preserved, it is used perfectly mature truffles that make the most of the table result. For this reason, we have chosen to produce mostly NATURAL preserved truffles (whole, sliced ​​and ground) leaving little space for the sauces, which are still produced with recipes always with non-preservative and gluten-free processing.
